Recycling

Our strict policy on waste generated by the business is to recycle everything, we do not send any waste to landfill. This includes the following:

  • Our ash from the incinerator is used to improve the quality of the soil on our land
  • Our broken crocks and plant trays are reused or placed in the “Free to good homes” bin
  • Our glass, paper, cardboard, cans and all other metals are all recycled
  • Our cooking oil is recycled to make bio-diesel fuel for re-use
  • Our dead plants, prunings, grass cuttings and compost are re-used to improve the soil and our land
  • Our roof water is collected, contained in storage and re-used to irrigate our plants
  • Our sewerage is recycled and re-used by Anglian Water to improve the local land

Local not Global

We always use locally grown or produced, fruit, vegetables and other ingredients in our restaurant wherever possible. Our kitchens bake freshly on the premises using only the finest local ingredients on a daily basis all year round.

The Benefits

There are as many reasons for supporting “locally grown” as there are farmers, but here are the most important ones:

Supporting local farm production puts a “face” behind the foods we consume and keeps us connected to the seasons, as well as the unique flavour and diversity of local crops.

Local Means Green

Buying produce from local growers reduces the environmental impact and costs of transporting product. And most of the money spent on local production stays in the community, “greening up” the local economy.

Preserving Character

Small local farms are a valuable component of a community’s character, helping maintain agricultural heritage, preserve land use diversity, and moderate development.

Crop Diversity and Quality

Many farmers producing for a local market choose to diversify, growing a variety of crops instead of just one. This is a boon for biodiversity and your palate, since local crops are harvested at their peak of freshness and flavor.
